Amaranth is a highly versatile plant grown as a cover crop, grain, leafy green, and for its ornamental blossoms. All varieties of Amaranth feature stunning large flowers when in bloom and provide edible greens and seed. The seed of the amaranth plant is considered an ancient grain, and its original cultivation reaches back to the time of the Aztecs! It makes a nutritious naturally gluten-free option when cooked as a cereal or ground into flour. These plants can range from 2-5’ tall and 1-2’ wide depending on the variety and conditions. Amaranth is heat-tolerant, so greens can be enjoyed even in hotter months when many other greens are bolting. The plants can survive moist climates but appreciate well-drained soil and a significant amount of sunlight. Once established they are pretty hands-off plants. Amaranth can be planted from mid-summer to early spring when the danger of frost is passed. Amaranths are self-reseeding annuals. So if growing for grain be sure to get to the seeds before the birds do! All of our Amaranth varieties are certified organic. Red Elephant Head Elephant Head Amaranth (Amaranthus gangeticus) is a striking heirloom variety brought to the United States in the late 1800s. Plants typically reach a stout two to three feet and form giant burgundy, which as the name suggest resemble an elephant trunk reaching skyward. Young edible leaves are delicious steamed like spinach and the mature seeds are high in protein, and can be cooked like a grain or ground to make flour. Red Callaloo Red Callaloo Amaranth (Amaranthus tricolor) is a variety primarily grown for its edible young leaves, which have a gorgeous red on green pattern. Amaranths thrive in hot summer climates, making this variety an ideal source for summer greens when collards, kales and spinaches can’t be easily grown. Or, if you can get away with growing other summer greens, Callaloo makes a striking addition to braising/baby stir-fry mixes. An easy to grow plant that doubles as an ornamental! Orange Chinese Giant Chinese Giant Orange Amaranth (Amaranthus hypochondriacus) is an excellent amaranth strain to grow for food. Yellow-green young foliage eventually form thick stalks and dense plumes of dark orange flowers that eventually give way to heavy yields of tan orange seeds. Given the right fertility conditions, these plants can really get tall; over eight feet during our seed production. High yields make this an ideal grain amaranth, but the young foliage can also be cooked and eaten like spinach. Hopi Red Dye Hopi Red Dye (Amaranthus cruentus) was sourced from a Hopi Reservation in the late 1970s and brought into circulation by Native Seed Search. Known as “Komo,” the scarlet flowering heads add color to Hopi piki bread – thus the name “Hopi Red Dye.” The plants grow four to six feet in height and produce beautiful black seeds that are nutritious and easy to process for eating. The leaves can be enjoyed throughout the growing season. Hopi Red Dye is also a popular variety for flower bouquets.

I planted this healthy, strong, and tasty hot weather 'spinach' two months ago. It has not done well in pots, but in the ground it does very well. It does not appear to like competition, but still manages to out grow most plants. I have two 2 foot tall plants (With half inch thick stems) that have provided enough pickings for two large spinach dishes.The seeds are tiny, but germinate well. Don't plant too many! They seem to be loved by many garden critters - after planting this in one spot I had seedlings coming up all over the garden. Also, once amaranth goes to seed you will find it everywhere. If you don't want this, remember to cut the flower heads off before they seed. My first planting self seeded and lasted three years before I needed to buy some seeds again.It does not attract bugs, but it does attract iguana (Although they have many other favorites and usually attack this last.) It requires much less water than cold weather spinach and the mature plants survive dry periods beautifully.It is a bit tougher than baby leaf spinach, but less astringent. It doesn't leave my teeth feeling funny. It matches very well with sweet potato greens baked with some coconut milk and nutmeg, or emmental cheese, cream, and nutmeg.I live near the sea in the tropics. The temperature is usually between 80F and 90F and we get less than 3" of rain most months.
